Happy Monday not. 😀

Is it terrible to say that I’m already ready for the weekend to get here??

This weekend went pretty well! Of course you know about Saturday…on Sunday, I woke up at 7 A.M. to start on some unfinished dietetic projects. Jason woke up and did the same, and we were diligent in our work until 3 [which was when I felt like I was going to pull my hair out!]. I needed fresh air and sunshine before I went freakin’crazy! Those of you that are in school, do you ever just feel like crying after doing a bunch of homework?! It begins to feel like my brain is short-circuiting and is gonna blow any minute.

For a break, we drove to Cramerton to do a hilly 4 mile run. That helped bunches 😀 Running always seems to help!

This morning I woke up and turned in more homework and read the news online before school. Breakfast was a simple wheat cinnamon/raisin english muffin with pb and apricot jam and a naner. (Do I even need to state that I had a coffee with it?? 😉 )

Just a smile to start my day 🙂

There are only 3 weeks (!!) left of school and it’s getting pretty intense in class. Our breaks are getting shorter because we are trying to get everything we need done before summer break. Mid-morning I broke into my brownie Cliff bar (ate half) and then got right back to work on a Portion Control project.

Today we had 15 minutes for lunch…

That wasn’t enough time for me today! I brought sugar snap peas with hummus, a grapefruit, vegetable flaxseed tortilla chips and pudding cup..I only got through the chips, peas and hummus before having to pack back up 😦

The good thing is, is that we had to be back in time for a celebration! One of the students in the program won an award from the Honor’s Society in Raleigh, NC. She was chosen to respresent our school for her outstanding grades and academic achievement.

 Congrats Susan! She was so surprised when she came in the door! Total shock 😀 We threw rose petals at her, they crowned her and gave her a sash and even had a cake too! I love my teachers and my director, they are so great.

There was cake to be had….

..and also some fun to be had with the icing too 😉 [I like to find ways to entertain myself]

After the celebration, it was back to class! Then, an hour later, it was off to coach Girls on the Run. Luckily, I had time to eat my grapefruit while they played running games.  One of the girls thought I was eating a lemon!! I can’t believe she didn’t know what a grapefruit was! Hehe.

Once Jason got home later on, we went to the gym for an intense workout that consisted of:

  • 50 scissor crunches
  • 50 regular crunches
  • 50 oblique crunches
  • 3 sets of 10- V-pulldowns (55 lbs)
  • 3 sets of 12 chest press (55 lbs)
  • 3 sets of 8  lat pulldowns (62.5 lbs)
  • 15 minutes elliptical (hill setting)
  • 15 minutes speed walking with5 lb. weights

Holy moly. I have to admit that I was running on pure adrenaline..and I didn’t feel like I was even doing anything during that workout, but oh boy is it starting to hurt now. But it’s a good sort of pain though, and I’m not feeling the stress of school as bad as I was before walking in there!

Dinner was an easy pick: Beer Italian Potato Torta!

You can find the recipe here. Of course, I used a rectangle pan instead of a circle one because that’s all I had. I don’t think it makes a difference either way.

I may have pictured it coming out of the oven, but I totally forgot to take a picture of my plate! I had to servings, served with mixed greens salad…

…and it seems a beer did make it in there somehow 😉

And that was dinner. Now my sweet tooth is in over-drive…wonder if we have any dark chocolate left???

Run For the Money, or For a Giveaway!

Hey bloggies 😀

Thank you so much for all the well-wishes for Trixie, each one brought a smile to my face 🙂 She is doing better, hasn’t had a seizure since Thursday morning…if anything, she is a bit slower than usual, but she is still up for her daily walks, so that’s a good thing!

I’ve been giving her lots of these lately:

Well, as you know, today was my Girls on the Run groups first 5k! We have been training them since February for this day, and let me tell you: my girls did NOT dissapoint 😀

I was up and at’em at 5:15 this morning so I could meet the girls at 6:45 to get them ready to run! I had a quick cup of unpictured  coffee and a boring ol’ peanut butter Cliff bar. Then it was off to the race!

This is the 8th annual Run for the Money 5k in Gastonia. The fastest runners are allowed to donate their winning money to the organization of their choice (there were even a few to donate to Girls on the Run!!). It’s really a great community run, such a friendly vibe going around.

I helped the girls get their numbers and chips on and then we headed to the starting line. About 10 minutes later, we were off! At first we stuck together as a group, but the girls that don’t really need pushing and encouragement took off with a few other girls. I, and the assistant coach, stayed behind with the one’s who were struggling. We did a walk/run combo and the time seemed to fly by..maybe because I was being so chatty?? 😉

When one of my girls saw the finish line, she completely bolted outta there! I had to catch up! The few I was with finished in 48 minutes, but some of the faster runners finished in 23!!!!!! They all did so awesome and I could not be more proud 😀 I almost feel like a mother watching her children graduate, haha 😀

Then, at the end, everyone had a chance to get onstage and sing kareoke. Well, all the girls in the GOTR program in Gaston County got on stage and did an adorable rendition of “Girls Just Wanna Have Fun”. But instead of singing it that way, they chose to sing it: “Girls Just Wanna Go Run” How freakin cute is that?! 😀

I hung out for a bit and congratulated all of them, talked to some parents, and stuff like that. Then it was time for me to go home and eat! On the way I stopped and purchased my second coffee of the day:

And for a late breakfast, I had a quick bowl of Cheerios with banana and almond milk.

Breakfast was followed by a walk with Trixie, some strength training and some house cleaning. (I guess you could say that I had a lot of pent up energy…or too much caffeine…your choice.) I lay down on the couch for a while once I was finished with all that, read a few pages of my book and proceeded to fall asleep. Ten minutes later, I’m woken up by Jason making lunch.

Lunch for me:

A smart dog, leftover mexican chili and half of a grapefruit (<—totally obsessed with grapefruit lately).

Jas and I set out to Charlotte so I could go walk my boss’ dog while they are out of town. We also ended up going to Target (somehow I always end up at a Target, no matter what city I’m in….strange, huh?), Trader Joes, the park and then Brixx for dinner!

‘Twas starving like crazy around 4 pm. I really tried to wait until an “appropriate” dinner time, but I couldn’t. Oh well!

The dinner started with a very spicy spinach/artichoke dip with crostini bread:

Don’t think I’ll order it again, it was a little too spicy for my liking. However, the plate was clear when the waiter came to take our orders 😀

I ordered the wood roasted veggie pizza…

…and only had room for 3 slices. I know what I’m having for lunch tomorrow!!

On the drive back home, I broke into my favorite frozen fruit bars from Trader Joes (and I may have had a small cookie too 😀 )

I wore the shirt biking, weight lifting and then on the elliptical and guess what? The only sign of sweat on the shirt were just a few dots around my stomach! Totally not as much as there would usually be on any other shirt!

And the shirt is made of mostly bamboo and cotton. That combo helps give your body breathability, and it also helps prevent odor and wicking! It’s the softest exercise shirt I have ever had the pleasure of wearing 😀

I’ll start: When I was doing my first 10k trail race, I was running up behind a guy that was slowing down, so I decided to go to his left and pass him, and when I did, he totally spit on my leg! UCK. I had nothing to wipe it off with, so I just had to keep running. He said he didn’t see me there…I guess sometimes spit happens, haha.  Now it’s your turn 😀

I Gotta Blog

Like the title says: I gotta blog.

You guys, these past two days have been the most emotional days ever..and if you are in a good mood, don’t read! Because I would hate to rain on anyone’s parade. Lot’s of stuff going on in the world of Stacey and I need to write.

Let me back up to yestereday:

I started my morning with 2 smooshed blueberry muffins with jam:

and a semi green smoothie that consisted of: 1/2 cup frozen strawberries, one HUGE naner, almond milk, pb and 2 handfuls of spinach. I only drank 3/4 and gave the rest to Jason, who had been eyeballin’ it ever since he stumbled out of bed.

On my way to school I stopped and got a water and a half-caf iced coffee:

In class, we are working on management formulas for a dietary staff in a kitchen, and I’m so lost. That’s when all of the emotional upheavel started. My nerves were torn up after trying to understand budget analysis and blah blah blah, we had a speaker coming so we were alloted 15 minutes to inhale our lunches.

[I seem to have misplaced the pic of my lunch. ‘Twas leftover sweet potato casserole and a veggie salad with goat cheese. ] My teacher actually found us after only 10 minutes and told us the speaker was early and to come back to class. Good thing I had a small lunch 😀

After class, it was off to coach Girls on the Run. Before going in, I had half of a Cliff Carrot Cake bar:

Practice went very well. They ran better than they have all semester. Perhaps it’s because their first 5k is this weekend?!

When leaving, things took a turn for the worse. I was on my way to go to the gym to do a 5-miler and while driving there I see a cat get hit by a car 😦 The jerkoff driver didn’t even stop! He just kept driving and the cat was still alive, so I turned my car around and found a place to park.

I jumped out and ran over to it. I’m not gonna go into detail because it was pretty horrible…I didn’t want to touch it and scare it, it kept trying to pick itself up and then just collapsing…I was freakin hysterical. How can you hit an animal and not stop?! After trying to get itself out of the road, it just kind of gave up 😦 It was dead when I left.

 

I could not stop crying. For some reason, I’m super sensitive to things like that. I drove to the gym thinking maybe I could stop blubbering enough to do something to get my mind off of what I just saw, but I never even made it out of the car.

I spent the rest of the night crying out of nowhere. I cried because dinner was brown. I cried because I was tired, I cried when the rice didn’t boil all the way..every little things was setting me off…when really, I was just crying because of humanity. I don’t understand how the world can be so thoughtless sometimes.

I gobbled down a plate of veggie/bean spicy stir-fry and called it a night.

And what happened this morning before work just threw me into a whole other heart-wrenching day.

I woke up at 5:30 and sat down at the computer to look at the weather..Trixie did her usual routine of following me, but when she stood up to come to me she convulsed and fell back down to the floor.

My first thought: That’s odd. What are you doing, Trixer?

Then she did it again….and again…the poor thing couldn’t even stand up without convulsing terribly and then having her body go stiff, and just lay back down.

Jason heard me get upset and came in there and suggested we take her to the vet. We spent an hour in an emergency clinic. Apparantly, my dog was having seizures. They said it’s either because of poisoning (which is highly unlikely) or because of her age (12).

I know she isn’t as young as she used to be, but I never thought I’d have to deal with this sort of thing. I was naive in thinking she’d always be around. 😦 I just feel so sad.

He says if the seizures are starting, then it’s likely to expect more, but there is no telling when…could be later on today, next year, or month or whenever. I’ve had all of the emotions I can handle in a 48 hour period..no more..please, no more.

I know I promised two giveaways and they are coming. Perhaps even this weekend? We will see how things go. Sorry to be such a downer, but writing typing helps, so that’s what I shall do. See ya in a few days!

13.1? Check!

I did it!! 😀

Yesterday I ran my first half-marathon and could not be more proud of Jason or myself. Shall I tell you all about it??? Yes, I shall 😉

We hardly got any sleep the night before the marathon…Trix woke us up at 3 AM needing to go to the bathroom and there was no way in heck I could fall back asleep. My alarm went off at 5 and I stumbled out of bed to start coffee (duh).

While that was dripping, Jason got out of bed and turned on some mu-zak to get us going! The house was filled with The Killers, Survivor (Eye of the Tiger!), The Scorpions and U2 😀 I ate a boring breakfast of waffles with jam, pb and a naner…then we got ready to go to Charlotte!

That would be the FitBloggin Thriv T-shirt that we recieved in Baltimore, let me just say that this is the second time I’ve worn it and it’s freaking amazingly comfortable. I sort of wish I could live in it..and I sense that there may be a chance for me to share the comfortability with you guys…..(*cough* giveaway *cough*) So stayed tuned for that! 😉

‘Twas freezing outside when we first got the race! My hands were pretty much frozen solid and I was running around trying to find a bathroom that didn’t have a 10-mile line with it..no such luck 😦

…And then, ten minutes later, the race started! Jas and I started out really strong 😀 We talked, looked around at the scenery and just had a fun time running with other runners. Around mile 4 I had to stop and pee. Which meant I also had to stop and wait in line to pee 😦 UGH. I hate stopping in the middle of a race for anything! I get the feeling that thousands of people are just zooming by me and I’m loosing huge amounts of time.

Jason told me to calm down and that he didn’t care if we lost a little time…but still…do you guys feel this way??

I used the bathroom and quickly got back into the crowd of runners. We stopped three more times, just long enough to gulp some water and Gatorade, then we got back at it 😀 Thank God for training on Cramerton hills! The course wasn’t as hilly as I suspected and my legs didn’t hurt as much as they did on the 10 mile runs I’ve been doing! I felt great and strong the entire time 😀

We finished in 2:18  😀 Fine with me!!

I guess you could say I was “on cloud nine” after the race. My legs didn’t hurt that much and I felt fantastic! I got a little grumpy when I saw that they had already run out of beer and bread!!!! All they had were brown bananas and orange slices 😦 I wanted beer and bread. Hopefully next year they will plan it a little better? (Hellloooo, there were like 2,800 runners! They are going to want to eat!)

They did have a band though 🙂

We stuck around long enough to hear a couple of songs and stretch then we were outta there to find some real food!

Big Daddy’s it was!

Hello carbs 😀 I love you. My name is Stacey and I need you more than ever before…Eggs with spinach, feta, mushroom and onions, breakfast potatoes with roasted peppers (pre-ketchup) and wheat toast. All had with a HUGE Diet Coke. YUMMO! Was delicious in soooo many ways, and just what my body needed.

Jason ordered a big burger and tater tots…the following conversation ensued:

Me- “Jason, gimme some of your tots”

Jas-“No, get your own..I’ starving. I haven’t had frickin anything to eat today” <–said in the voice of Napoleon Dynamite

Me- *slams fist down into stupid tater tots and squished them all*

Ha 😀 I made the last part up…he was willing to share. Tater tots always remind me of Napoleon Dynamite. Anywho, I digress!

After lunch we went home and I proceeded to take a 2 hour nap. Trixie woke me up (I guess she needs more attention these last couple of days!) and we decided to take her to the park and get ice cream too!

I got the double chocolate chunk with Heath peices and sprinkles…mmmm…nom, nom, nom.

We bought a grill at Target (fun stuff, I tell ya) and then slowly made our way back home so I could get ready for an Indian dinner with two lovely ladies 😀

I met Whit and Elle at Situl Indian Restaurant in Charlotte for a spicy dinna 😉

We started out with an appetizer that I can’t even begin to pronounce, ’twas yummy. Sorry, but I had no idea what it was! I just knew that it was vegetarian and that I like it 😀

However, I did end up ordering something that I could pronounce…Chana Masala 😀

Served with cheesy, buttery naan and white rice….I’ve died and gone to heaven.

Too soon it was time to say ‘Goodbye’ and head back home. To be honest, my legs were starting to hurt a little and an early bedtime was in the back of my mind (after all, I had gotten up at 5 Am!)…

So, ya know…I finished the half-marathon and can now officially put a 13.1 sticker on the back of my car!

Perhaps a 26.2 sticker is next??? 😀

A Run in the Sun

Hey friends! 🙂

It has been a busy week for me, as always…but as always it was filled with some fun moments too!

For instance…going out for ice cream after Girls on the Run practice….

and having a nice, relaxing, river-side dinner with the boyfriend on Thursday night 😀  Caution: Beer, salad and beautiful views may have been involved! (No pic of the salad though! It’s my usual Mediterranean salad that I order from H&M Deli in Cramerton.)

I’ve been sort of “taking it easy” on my body this week because Jas and I had an 11 mile run planned out for Saturday morning. The only exercise I’ve done all week is my usual strength training routine and walking alot. So when Saturday morning came I was ready to satisfy my runner’s itch that had been bugging me all week!

I started my morning out with a whole wheat bagel, Dark Chocolate Dreams, strawberry jam, a naner and some coffee.

Like my smiley?? 😀

I also decided, since the weather has been kick-ass lately, that I would try out the shorts and socks that New Balance so graciously supplied us FitBloggers with!

After loading up the car and Jason’s pockets with snacks, drinks, car keys and lip balm, we were out the door! Our running route was the same as this run (ah hem, can you tell I really, reeeaalllly miss Cramerton?!)

The run started out great, but I have to say that I was not mentally prepared for the humidity. It was the type of hot where there is no breeze, it’s just muggy un-moving air 😦 Around mile 6, I broke into my raisins and guzzled water from the Camelbak.

Not gonna lie, the last few miles of the run were extremely hard! The sun was just beating down on me and I could feel my skin burning. Jas and I had drank all of the water out of the Camelbak and all I wanted to do was get back to the car where I had another drink waiting for me. Plus, the last few miles have 4 hills that are back-to-back and my brain and legs were screaming at me. But…. I made it 😀

Jason and I did some stretching for about 10 minutes..

After that, I felt as strong as ever! Yay!

And as for the shorts: The biggest deal was that I never felt the inseam in them! My other running shorts have an inseam that rides up *if you know what I mean, wink wink* and sometimes they even give me a bad chaffing 😦 But with these shorts, I felt like I was wearing just regular shorts! The pocket is a little small, so I couldn’t hold my car key in there, but it may be perfect for an MP3 player or something 😀

As for the socks: Their probably the best quality socks that my little tootsies have ever had the pleasure of wearing. They are thick and don’t rub against me everytime my feet hit the pavement. What’s even better is that I came out of the run with no blisters on me feet! A+ from me, New Balance! 😀

We finished our run around 1:30 and went back to H&M Deli (second time in one week!) for some lunch. This time I got my other usual 😉 Pesto focaccia sandwich with chips that I shared with the boyfriend!

After our tummies were satisfied and after I was about to pop a button, errr seam we drove around town looking at homes that were for sale, then we made a shopping trip to Target (yay :D) and to the grocery store for ingredients for dinner.

Dinner was based off of a recipe I found on the internet, but once I skimmed over it…I just kinda took it in my own direction to see what I would come up with…and it was totally worth it!

Gnocchi with Sweet Potatos, Mushrooms and Spinach

Ingredients:

  • 2 large sweet potatoes
  • 1 package of Gnocchi <–can find in pasta aisle at grocery store
  • 3 Tablespoons brown sugar
  • 1/2 teaspoon nutmeg
  • salt and pepper
  • 2 cups raw spinach
  • 1/4 cup chopped yellow onion
  • 2 Tablespoons butter
  • 2 cups vegetable broth
  • 1 cup sliced baby bella mushrooms
  • 1 Tablespoon minced garlic
  • 1/2 teaspooon dried thyme
  • grated parmesan cheese
  • 1/2 cup low-fat Ricotta cheese (OPTIONAL)

Directions:

Preheat oven to 425 degrees. Peel potatoes and chop them into cubes. Add nutmeg, brown sugar, salt and 1-2 Tablespoons of olive oil to bowl. Mix until all potatoes are covered. Place potatoes on baking sheet that has been lined with cooking spray. Bake in oven for 25 minutes.

Meanwhile, heat 2 Tablespoons of olive oil in a large skillet over medium heat. Add garlic and onions to oil until tender. Add mushrooms and saute until softened and fragrant. Add broth, butter, spinach, salt and pepper into the skillet. Cook until spinach is wilted and the broth has cooked down. (It may take a few minutes for the broth to evaporate, but just be patient!)

Cook gnocchi according to package directions. Add potatoes and gnocchi to skillet mixture. Let cool for about 5 minutes. Serve in a bowl with parmesan cheese sprinkled on top.

I added 1/2 cup of ricotta cheese to the mixture. But I would recommend tasting the veggie mixture by itself first and then if you want to add the cheese, you can. It tasted good nonetheless, so it’s a winner in my book! It was very filling too, I only had a bowl when usually I go back for seconds on dinner. Or maybe I was just saving room for dessert?? 😉

Yep. I guess you could say Mr.Sun taught me a lesson that day. NOT TO FORGET TO EAT DESSERT. Haha, jk 😀 I think the lesson may have been to not only apply sunscreen to my face but all over when I’m heading out for a run…especially now that it’s spring and over 80 degrees outside. Duh Stacey. But the popsicle was good!! It has big chunks of fruit in it and only 80 calories a pop 😀 <—“a pop” HAHA. Get it??
