Enjoying the Present..Awaiting the Future

Hey there 😀

Finally! A chance to blog! My week has been crazy busy. Hopefully ya’lls (<–is an actual word in my southern brain) wasn’t as hectic!

I am so thankful for a chance to sit down and blog..cos I’ve gotta a lot of thoughts churnin’ up in the ol’ noodle 🙂 I’ll start with my workouts for this week:

There was Level 3 of the 30 Day Shred…

Anyone else out there that felt like crying during this?? Anyone? Anyone? Jillian Micheals is a beast. I had to stop a few times just to keep my muscles from bursting into flames. And though I knew it was going to hurt before I started, I had no idea she would reduce me to mushy, jello-y pulp. I made it through though with a few encouraging words from the boyfriend. “You can do it. Come on babe!” Easy for him to say! He’s relaxing in a comfy chair at the desk!!!  😀

Wednesday is always my busiest day. There is school, workout, Girls on the Run coaching, studying, cooking and then usually blogging or homework. I probably don’t need to say that the blogging was put on the back burner this Wednesday!

Though I didn’t have time to blog, I would like to talk about my nonexsistant eats.

I usually pride myself in planning my meals and eating food from home during the week. But this Wednesday was the worst food “planning” ever. Here is a recap:

My day started on the right foot with Kashi Go Lean, a naner and coffee.

Then, it was out the door to get to class. We were meeting at the hospital to do clinicals and I wrongly assumed we would be eating at the cafeteria afterwards. The only thing I packed for a snack was a pb&j sandwich with raisin bread!

When 12 o’clock rolled around…I was in the “I’m-so-hungry-I’m-gonna-eat-my-arm” mode. My teacher informed us that we were heading back to the college to finish class, and I was lucky enough to find a grocery store that would supply me with a pear and an Honest Tea (<—love them!!).

The sandwich was gone in a millisecond and the stupid pear wasn’t ripe!

Arg. You can tell from the pic that there aren’t even any juices coming out of it. It was hard as a brick. I threw it back in a plastic baggy and stuffed it into my purse 😦

Our classroom wasn’t open, so I couldn’t get in to get some ice for my tea, so I had to drink it warm. Ugh. It was still tasty though 😀 And I love the little messages on the inside of the cap!

So, my only food consumption thus far had been a bowl of cereal with nana and a pb& j sandwich. I’m pretty sure I had burned off the breakfast walking around the hospital. By now, my body is going “What the hell Stacey?! Come on!”

From school, I drive directly to coach for the girls. No snack,  nothing. The only thing that was available to me was that hard, watery-tasting pear in my purse. At 4 o’clock I had to eat it. I had to eat something or I was going to end up stealing from the school cafeteria….and I’m pretty sure there is a law against that 😉

Dinner was quick and easy because I needed it to be! I made tempeh sloppy joes, broccoli and baked red potatoes

…which I sliced using my new mandolin slicer!! 😀 Yes. My name is Stacey and I get excited about new kitchen gadgets 🙂

The sloppy joe recipe still needs a bit of tweaking, so I am not going to post it yet. I’ve been combining different techniques  and ingredients to get it just right..but it’s not quite there yet. It was still tasty though! Just needs a little spice.

Wednesday was an “off” day for me..I doubt that I took in enough calories to even fuel a workout. Thursday, Jas and I went to the gym. We did abs (balance ball), sit ups, bicycle crunches, incline push ups (3×15), bench dips (3×15) and then I ran 4 miles on the dreadtreadmill, finishing in 39 minutes.

Tonight? Yoga night!!! Yay 😀

Please excuse my cats enormous head

…ending with a kiss from Trixie 🙂

Now for some sporadic thoughts/decisions from moi (<– have no idea how to spell it!) 😀

  • I am 90% certain that I am going to go on to become an R.D. after I graduate. It wouldn’t take me that long since most of the classes I have now will transfer…and I figure, why not?…From there, it’s on to exercise science! It’s exciting to think about where the future will lead me 😀
  • Eggs are no longer something I will be eating..at least not if I can control it. I have also decided to switch to soy milk. I am not going completely vegan. But, my decisions are based on:  A. I can’t find an egg supplier at my local grocery stores that provide cage-free, free range, n0 -hormones-added eggs. (I used to buy Eggland’s Best, but if you go on their website, you will see that the chickens are “free-range” but kept inside a building..just not in cages. I’m planning on switching to an egg substitute. B. Soy milk makes my skin look better 🙂 Simple as that. And there is no way I could ever give up cheese!

Oh! And some interesting things I’ve learned in school:

  • Caffeine lowers the amount of Iron absorbed in the body. (As does tea). (I’m still gonna drink it though!) No need to worry if you get plenty of Iron..or take a multi-vitamin every day.
  • Eating five or six small meals everyday is not linked to weight loss. It’s the food that is actually eaten that has affect on weight loss, not how many times a day a person eats.
  • Americans consume six times the amount of sodium intake that is required (!!). 500 mg. per day is roughly the daily requirement. Most Americans are consuming 3 to 8 grams daily. Yikes!!

So that’s that. Just thought it was interesting info and wanted to share 😀 Hope ya don’t mind! On the agenda for this weekend:

Saturday- write a paper on benefits of “functional foods”-specifically catechins in green tea–write reports for clinicals–do Algebra homework (ick)–bathe Trixie–strength training–and cook!

Sunday- will not do ANY homework whatsoever–see “Shutter Island” with Jason–blog–6 mile run–have dinner out??

Okay. Phew! Time for some hot tea, dark chocolate and a little time on the couch 😉 Have a lovely weekend bloggies!

PS. Can anyone recommend a good protein or whey powder mix for an after-workout snack??? There are so many out there!!

Pump It

Morning! 😀 (I’d like to go ahead and apologize for this post being a little scattered! It’s about 6 am, and I just woke up 🙂 But I’ve missed you guys so I wanted to post before school!)

Sorry for being M.I.A. last week, but it was a very busy one!

Thursday was our 2 year anniversary 😀 I woke up to this message on the fridge:

That made it much easier to get through work….I’ve got the sweetest guy ever 🙂 We celebrated by drinking beer and cozying up on the couch to watch First 48 together for most of the night…which, in my opinion, is a perfect night.

(Haha. Please excuse that guys mugshot in the background!)

Friday went by uneventfully. We worked on some strength training at the gym after work. Here is what I have done this week:

  • Total Mileage: 10 (running, of course!)
  • A BUNCH of strength training, I will try to remember it all: 25 lb. bicep curls, 55 lb. chest press, 45 lb. military press, bench dips, bicycle crunches, crunches with an exercise ball, 25 lb. v-flys, 55 lb. lat pulldowns…….I think that’s it!

I have been increasing the amount of weights that I am lifting so I can get more strength and definition in my arms, and boy…let me tell ya, I am sore when I get through. But, a good kind of sore 😉

Okay! On to a more exciting day!! Saturdayyyyyyyy!!!!!!!!!!

Saturday=Black Eyed Peas concert. ‘Nuf said.

We started our busy morning with coffee….

…and while pouring, I thought to myself: “Wouldn’t coffeecake go best with coffee???Especially blueberry coffee cake?

Hmmm just so happens I have blueberries  in the fridge. What a coincidence 😉 Ladies and gentlemen (?), I give you blueberry coffeecake:

That picture should be X-rated. Seriously guys, when this came out of the oven, I wanted to smuggle it under my shirt and take it to a secluded part of the house so I could  have it all to myself…..but I had to share. 😀

It’s very simple to make! Here are the ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 tablespoons butter, melted
  • 1 cup fresh blueberries
  • 2/3 cup vanilla soymilk (or you can use buttermilk)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 large egg
  • cooking spray
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon

Preheat oven to 350. Combine first 5 ingredients in a bowl, mix together. Add 2/3 cup blueberries and toss. Combine milk, egg, butter, vanilla and almond extract in a bowl, stirring with a whisk. Add wet mixture to dry mixture until moist.

Spoon batter into an 8 inch square baking dish coated with cooking spray. Top with remaining blueberries. Combine cinnamon and brown sugar in a small bowl, then sprinkle over top of blueberries. Bake for 35 minutes. That’s it!

Sometimes I sprinkle almond slices on top of the coffeecake, but we didn’t have any so I just skipped it 🙂 My plate (with pb on top):

Two seconds minutes later:

I absolutely hated it. 😉

Jas and I spent most of the morning doing errands, homework and cleaning the house. We decided to break for lunch around 1. I wanted something quick and easy so we could get ready to go to Charlotte. And this was staring at me when I opened the cabinet door:

Add some spinach and black eyed peas (it seemed only fitting!!) and you have a meal!

There were other various snacks throughout the day, but for times sake I am going to skip them! Ya know, just so I can leave room for the good stuff 😀

Jason and I went to a few places in Charlotte to take up time before the concert, we decided to have an early dinner at Big Daddy’s Burger Bar.

I started my meal with a Blue Moon:

Then the food came! I made my own salad with spinach, avocado, chickpeas, cucumbers, strawberries, tomatoes and tortilla strips.

I promise there is a salad under there!

And of course I can’t go there without getting their sweet potato fries 😀

Nom nom nom. Jason had to help me finish these off!

After eating, we went to find parking for the concert and I am so glad we did because the line to the arena was out of the door and almost all the way down the block!!! The tickets said to not bring cameras in, though everyone did anyway..we played by the rules and left ours in the car..but not before taking a quick pic of us to show how excited we were!!

See? Pure excitment 😀

I soooo wish I would’ve brought my camera in 😦 Everyone else did. Let me just say the show was A-MAZING. It included a flying motorcycle, a freestyle rap by Will.I.Am and speaker/robot costumes. The newspapers were saying that it was going to be the “ultimate dance party”. It was!!!!! We were on the second level and could look across the entire stadium and there wasn’t one person that wasn’t dancing!

They are so talented you guys. Fergie sounds even better in concert than on the radio, and they had great special effects. They played all of my favorite songs, ending with “I Gotta Feeling”..I was dancing my booty off. No really, I think I danced it off. It must be still in the bleachers somewhere 😉

At the end of the song, thousands of pieces of confetti shot into the air, it was almost magical haha. It. was. great. And though Jas and I pride ourselves on being die-hard rock fans, it’s nice to go see a group I can move to 🙂 Alice in Chains concert is next!

After the concert, we lazily headed back to the car. My legs were sore from dancing in heels all night and I was ready to go to bed! It was such a great Saturday, and the Black Eyed Peas did not dissapoint.

Sunday was a little more laid back. The weather was awesome, so Jas and I got to the park to walk Trixie:

After our nice little walk, the rest of my day had to be devoted to Algebra. ICK. But oh well! That’s the way life is. I had enough fun Saturday to last me for a good, solid week 😀

Gotta get ready for school! I gotta feelin’…that today is gonna be a good Monday 😀 See ya later lovies!

Game Nerd

Hey lovies!! I hope everyone had a good weekend 😀

Saturday morning, I woke up to this:

That is her “I-want-something” face 🙂 I tried to satisfy her with a longggg belly rub, a couple of treats, a good brushing, but none of that worked. I quickly realized it was because she wanted to go play in this:

Snow!!!! It had accumulated over Friday night 😀 Trixie is a very old dog, but for some reason, when it snows she acts like a completely different dog! Like she’s 10 years younger or something 🙂 It makes me happy. Trixie will not go out walking by herself, so I went with her..ya know, just so I could go ‘splorin and stuff 😉

When we opened the door, her playmate Maggie was there to join us for our adventure!

After frolicking in the cold for about an hour, we came home to thaw out. I made Jas and I a yummy breakfast:

Spinach and cheese omelet, toast with raspberry preserves and a Morningstar sausage pattie. Oh, and grapes! Someone wasn’t able to wait until the picture was taken…or maybe a certain person just really loves toast 😉

Breakfast would not be complete without coffee! Ah hem..in my cutest mug 😀

The rest of Saturday went by uneventfully. I had an afternoon date with a guy named “College Algebra” and Jason had a date with his electric engineering textbooks. We did end up taking a break right before dinner to get in a good workout at the gym! Here is what I did:

20 minutes stairs, 20 minutes elliptical (random hills, level 8), 3×10 chestpress (45 lbs), 3×10 bicep curls (25 lbs), 50 right/left leg crunches, 50 standard crunches, 3×8 V-flys (25 lbs). Whew!

My upper body muscles were like jelly afterwards. Jas and I rested on the couch for the rest of the night..and then it was Sunday! We had a much more exciting Sunday 😀

Though I made a cute oatmeal breakfast, none of the pictures turned out right 😦 I made a heart out of chocolate chips on top of our oatmeal bowls, but by the time I got the camera ready they had pretty much melted into a big chocolatey glob 🙂 And, I’m pretty sure that while making the oats, a couple handfuls   of chocolate chips made it into my mouth as well.

After breakfast and a few hours of Food Network, we spent the rest of the morning/day cleaning! We  pulled out all of the furniture, sanitized the entire kitchen and bathroom, and we even took a few things to storage (including my bike 😦 ). It took us a good four hours but it was soooo worth it. Our house has never been this clean and tidy 🙂

Around 2 o’clock we took a lunch break:

Morningstar garden burger, with pickle, tomato, ketchup, miracle whip, spicy mustard and whole wheat bread. A juicy orange and Oikos yogurt. It was quick and easy, and it hit the spot. Oh. Where is my dessert, you ask?? Well, it’s right here:

I made brownies!! And as you know, the person that makes the brownies gets to lick the spoon and mixing bowl clean 😉 You didn’t think I just enjoyed making sweets for the heck of it, did you?! Hehe 🙂 If you are interested in making these fudgy, delicious brownies, you can find the recipe here.

We let our tummies settle for about 30 minutes then we set out on our “Valentine’s Day” run!

See? I’m even wearing a pink jacket in honor of Valentine’s Day 😀 But, what I am not wearing is make-up. And the hat is to cover up my frizzy bed-head…it was Sunday, and I had cleaned all day..so…..that pretty much explains that.

We both wanted to do a 5 mile run, so we parked at a local Rite Aid and started running towards the greenway. This is a route we have never done before, so it was pretty exciting! I was wearing a watch so I could time out our miles. The first 2.5 miles of the run felt extremely easy and breezy. Chit chat always seem to make the miles fly by! Jas and I reached our halfway point and turned around to go back the 2.5 miles we had just run.

During mile 3 I was really starting to feel all the aches in my muscles. Not only in my leg muscles, but my upper body muscles were still sore from Saturday’s workout. I told Jas I was feeling crappy, but he edged me on. What we failed to notice was, though the first part of the run is mainly downhill or flat, the second part of the run was not. It was a steady climb uphill all the way to our car!

On mile 4 my legs were screaming out of soreness. They literally felt like mush. Jason and I had kept up a good 9:30-10 minute pace, but on the last mile he says “Let’s try to make it to the car in less than 2 minutes!”.

Me: “Uhhhhhhhhhh.”

So we did 🙂 We sprinted the last 3/4 mile uphill. I thought I was going to die. Just fall over and wheeze to death. But I didn’t. My short little legs were going as fast as they could, and much to my amazement, we made it back with a minute to spare 😀 Woo hoo!

Once home, I set out to make dinner. I knew that once I sat on the couch, I would not get back up..so I wanted to get it out of the way! On the menu: Twiced Baked Spinach Potatoes!

  • 3 medium baking potatoes
  • 1/2 cup light cream cheese
  • 1/2 cup fat free milk
  • 1/4 cup chopped onion
  • 10 oz. frozen spinach, thawed and drained
  • salt and pepper to taste
  • 2 cups reduced fat sharp cheddar cheese
  • 1 tomato, sliced

Bake potatoes in oven at 400 degrees for one hour..or do it the easy way and pierce potatoes with a fork and cook for 16 minutes in the microwave, turning them halfway.

Once they are cooked, let them cool for 5 minutes. Add milk and cream cheese in a bowl, stirring with a whisk until mostly smooth. Scrap out the middle of the potatoes, leaving 1/4 inch thick shell. Add potatoes to milk mixture, add other ingredients and stir until blended. Spoon potato mixture back into the shells. Top with slice of tomato, and sprinkled cheese. Bake at 400 degrees for 15 minutes. Viola!  There you have a meal 😀

Before going into the oven:

Nom. Nom. NOm. They smelled a-mazing! I probably could’ve made a side dish for this, but I wasn’t in the mood. Actually, beer was my side dish 😀

My plate:

Add two brownies to that please 🙂 A run, potatos, beer, brownies…there is only more activity that could make this Valentine’s Day perfect…Scrabble! I guess I’m a bit of a game nerd 😉

And seeing as how this was Jason’s first word, I’m guessing he thinks so too 😀

Yikes! I need to get ready for school!! Some exciting things that are coming up:

  • Jas and I celebrate our 2 year anniversary this Thursday! ❤
  • Black Eyed Peas concert this Saturday
  • FitBloggin is only 4 weeks away!
  • I start Girls on the Run coaching this afternoon! Wish me luck 😀

What is something exciting about to happen in your life?? See you later blogulaters!

You Need to Run More

Hey guys 😀

Yay for the almost-here weekend! Seems that the weeks fly by now that I am back in school..anyone else feel that way??

Before I get started on what I really want to talk about, I shall tell you about my day!

I started this morning with a re-make of the oatmeal I had at Kath’s house on Saturday:

In this bowl:

  • 1/2 cup oats
  • 1/2 cup water, 1/2 cup vanilla soymilk
  • chai seeds
  • banana
  • Tbsp pb, tsp raspberry jam
  • 1/2 oat&honey bar crumbled on top

….with coffee of course 🙂

This breakfast was soooo good, but I was almost sweating by the time I finished it up! The hot oats with the hot coffee had me craving a big ol’ glass of ice water.

After kissing the boyfriend goodbye, I was on my way to school. The director of our program came into the classroom today to talk to us about Food Management and Food Budgeting…interesting stuff I tell ya 😉

Around 11 o’clock we took a break and I broke into the munchies that I had shoved in my purse on the way out the door:

Blueberry Crisp Cliff bar and some grapes.

And then, can you guess what we made in class today?? Here: I will give you a few hints 😀

It’s red…

You eat it…

If you guessed ketchup muffins then you are wrong 😉 Haha.

We made red velvet cupcakes!! And I got to shove my face with icing put the icing on top of them!

I like to pretend I am Rachel Ray.

Actually, I sort of volunteered. The person that is in charge of icing them obviously gets to scrape the remaining icing out of the container…and then eat it 😀 So you see, I figured I was the perfect girl for the job.

Holy moly. I could’ve lived off of the cream cheese topping….mmmmmmmm…….*drool*

The class was allowed to leave only after finishing our cupcakes. I had to eat all of it…you know, just so I could get out of there..

My next destination was the gym. I guess this is a good time to bring up what I want to talk about!

I realize that this is a “food, fitness/running” blog, but I often forget to share my workouts with you guys 😦 It’s not that I don’t want to, I just forget! The other day I was talking to Jason about the blog and he says: “You need to run more.” The name of my blog is “I’d Rather Be Running”. Because it’s true. I would rather be running, no matter what I am doing, I would always rather be running. I don’t want to seem like a running “poser”, if that’s even possible!

I run when I can. Just because I am not running 20 miles a week doesn’t mean that I don’t love to run. I admit that this winter has kind of hindered me and my running, but I have just gathered all of my upcoming spring race info and put it on the right side of the page 🙂 You guys should also know that I go to the gym 4 times a week. I will try my best to keep you updated of my workouts, runs and other fun stuff 🙂

Here are my workouts so far this week:

  • Monday: 1 hour yoga session with Jason
  • Tuesday: strength training: 60 left/right leg ab workouts, 3×15 deadlifts (8lbs), 3×20 shoulder press (8lbs), 3×20 punches (8lbs)..by the way, I usually skip cardio on tuesdays..and these exercises were done during Biggest Loser commercials 😀
  • Wednesday: see below!
  • Thursday: 100 crunches w/balance ball, 3×15 incline pushups, 45 minutes of speed walking (at park with dog)
  • Friday: gym with Jason? or off?
  • Saturday: whatever I don’t choose Friday
  • Sunday: bicycle crunches and a Valentines Day 5 mile run with my honey ❤

With that being said, I headed into the gym to conquer a run on the dreadmill. First, I warmed up with 100 crunches, 3×15 chest press (45 lbs.), 3×8 bicep curls (25 lbs.), 3×20 bench dips. Then it was time to run! I’ve succeeded in avoiding the treadmill all winter, but today I gave in. It was a biting chilly wind outside 😦 I managed to complete 3.5 miles!

Here are my stats:

1st mile: 10:09

2nd mile: 9:40

3rd mile: 9:24

I was pretty happy with the end result. It actually wasn’t as bad as I thought it would be. House Hunters was on the tele in front of me 😀

Once home, I walked Trixie and came back to snack on some Kashi cereal while I worked on a few reports for dietetics class:

Jason and I sat and chatted for a while after he got home from work. Beer was opened:

..and drank 🙂

We decided that tonight would be a good night for an orzo dinner! This Giada orzo was on sale at Target for $2 I love Target, I was pretty excited to come up with a dinner to make with it!

The final decision: Orzo Pasta with Spinach, Chickpeas and Dill

(Makes 8, 1 cup servings)

  • 2 cups orzo, uncooked
  • 2 cups frozen spinach
  • 1 pint grape tomatoes, havled
  • 1/4 cup goat cheese, crumbled
  • 1 can chickpeas, drained
  • 1 Tbsp. dry dill
  • 3 Tbsp. olive oil
  • 1 lemon, juiced
  • 1 tsp salt
  • 1 tsp minced garlic
  • pepper to taste

Cook orzo and spinach in a pot, bring to a boil. Remove from heat. Add chickpeas, dill, grape tomatoes and goat cheese. In a seperate small bowl, whisk together olive oil, salt, lemon juice and garlic. Add oil mixture to orzo, stirring until pasta is completely coated. Serve in a bowl and enjoy!

I had mine with a bit of homeade garlic toast 😀

‘Twas delicious…I loved the hint of lemon in the pasta. It had a nice zing to it 🙂 Of course, there were unpictured seconds.

Now my tummy is fully satisfied and I am ready to go night-night. A good book, a fluffy blanket and snuggly cat are calling my name! See ya later taters 😉

Do you have a weekly workout regimen? Or do you mix it up?

..And There Is Life

Hola chica’s 😀

How goes it?? My weekend has been pretty great so far!

I started off my Saturday with an oatmeal brunch at Kath’s house. ‘Twas delicious and nutritious 😉 Upon arriving, we were met with a table of toppings to add to our oats:

Jams, Great Harvest muffins, granola, wheatberries, raspberries annnnddddd….the star of the show, of course, was the peanut butter selection!

Holy cow. How can one not be jealous of her peanut butter selection?!? It was love at first bite sight for me 😀 I ended up choosing a spoonful of the Chocolate Cherry peanut butter and a spoonful of the Cacao Bliss to go into my fab bowl of oats:

Mmmmmmmm….waiting to take a picture of it was pure torture. I was ready to dig in! And the way the French Press was smelling too, ohhhhh Lordy…my stomach was being obnoxious..luckily there was enough chatter from the rest of the ladies that no one noticed 😉

After everyone went through the ‘topping buffet’ we went to take our seats at the dining room table:

Let’s see if I can remember all the names! Here we go: Whit, Kath, Diana, Michelle, Kate, Jessie and Emily. There. I think I got them all 😀

HAHA. Look at that face I’m giving Whit! Sorry Whit 🙂 I don’t really mean to look so angry lol. This pic (and another previous one) were courtesy of Diana and her camera 😀

The ladies sat and chatted for a while after our tummies were full of oatmeal, then it was time for me to leave to go see my niece and nephew! I drove back into my neck of the woods and spent some time with my sister, her two kids and my mom. We went to this huge place called “Monkey Joes” where they have all this inflattable stuff the kids can play on. It looked like a lot of fun! I didn’t take my camera in though because there were so many people in there, and I figured I’d be riding down some of the slides with my Lukey anyway 🙂 Here is a pic of us last summer:

Love him ❤ Miss the straight hair too!

After my visit with the family, I headed over to Books-A-Million for some reading, writing and more coffee time:

Jason was stuck at home doing homework 😦 I thought that we he was going to meet me when he was finished, but it was a big miscommunication! I headed home after I found that out.

On my way I gobbled down an unpictured banana, and then popped veggie marsala Kashi meal into the micro for a quick lunch fix:

Yes. Very appetizing, right?? It was just okay, nothing outta this world or anything. I’m not a big fan of microwavable meals, but I was pretty desperate for some nourishment at the time! Plus, these were on sale at Target for $2!!! Can’t pass up a bargain 🙂

While Jas finished up his homework, I took it upon myself to finish a book and soak in a hot, steamy bath 😀 Around 8 o’clock I set out to make a soupy dinner!

Broccoli and Potato Cheddar Cheese Soup, with a twist.

Into this pot:

  • 6 small (or 3 big) red potatoes
  • 1/2 medium onion, chopped
  • 2 cups frozen broccoli
  • 2 (14 1/4 oz. cans) veg broth
  • 1/4 cup all-purpose flour
  • 1 1/4 cups skim milk
  • 8 oz. sharp cheddar cheese
  • salt, pepper, Tabasco to taste <–perfect kick!

Directions: Whisk together 1/3 veg broth and flour in small bowl, set aside. Pour in rest of broth into pot, add broccoli, onion and potatoes, heat to a boiling until potatoes are tender. Gradually stir in flour mixture, stirring often for about 5 minutes. Add in milk and cheddar cheese. Stir until cheese melts evenly in pot. Add s+p, Tabasco to taste. Ladle into bowls, top with sprinkle cheese and enjoy!

On a rainy day like yesterday, it was a perfect comfort meal 😀

My bowl:

Mmmmm…melty, cheesy, ooey, gooey goodness.

Dinner was the prelude to a little game playing 😉 Jas and I set up a game of UNO on the couch, and pretty soon the popcorn came out as well!

Jason won three games in a row…

…he was a happy, gloating, camper 🙂

Finally, around 11:30, it was time for bed. I was in some serious need of sleep, these past few nights have been 5 hour nights, so I was totally excited about being able to sleep in! ‘Twas a peaceful, uninterrupted night of sleep…At 9 a.m. I woke up to this:

That would be Humphrey..the bear I got from my pe-paw when I was 4 years old. He gave him to me as a Christmas present back in 1989, and I was immediately in love with the bear. When you would press his heart, it would thump beneath your fingers 🙂 Poor Humphreys heart has beaten since I was about 7 though 😦 He sleeps in the bed with Jas and I, and I desperately casually mention how cool it would be if his heart still beat…and this morning, I found Jason doing his magic on him 😀

Out of all of the stuffed animals I have ever owned, Humphrey seems to be the one that has been by my side for years…through moves, breakups, school, fights, friends..everything. At first, having him through all that was unintentional, but now I can’t seem to sleep in the bed without him, as corny and childish as that sounds!

And OMG, you should’ve seen my face when Jason fixed him!!!!!! He had to hold the battery in place the whole time, but minus a few smoky sparks it started working! I felt the same Tha-thump, Tha-thump I did when I was 4 years old 😀 What Jason did is actually better than any store-bought gift he could give me.

Ironically, I am currently listening to Celine Dion’s “Where Does My Heart Beat Now” Haha 😀 Jas is waiting for me to finish up the post so we can head to Target, the gym and then to our fav little lunch spot. Stay warm today and be safe!

Do you have a childhood treasure that means a lot to you?? Please say you do so I don’t feel like such a dork 😉

I Love…

my new camera!!!!!!!!!!!!! It finally came! Woo hoo 😀

….snowy weekends with the boyfriend….

…sledding on a box in the middle of the woods…

….making dirt snow angels…

…thawing out on the couch with the whole family…

…a warm bowl of oats on a cold, rainy morning…

…good food….

tomato basil cream soup

"Napa Salad" with mixed greens, blue cheese crumbles, dried cranberries, walnuts and champaigne vinagerette dressing

…good friends…

Jessie, Meredith, Whit, Holly and myself

…and good desserts 😀

chocolate cake with caramel gelato, turtle cheesecake, tiramisu

…I also love throwing on some high heels and pretending that I am “Baby” from Dirty Dancing…
