Splotchy Face

Ohhhhh internet, how I’ve missed you! I’ve dreamt about you every night and longed for the moment when we would meet again! ๐Ÿ˜€ Howdy there!

You guys couldn’t possibly know this, but I’ve been house/dog-sitting for my boss yesterday and today and when I tried to get on the internet to post it was down!!! Dun dun dunnnnnnnn. But it’s better now! ๐Ÿ™‚ Note to self: Bring own computer next time!

My week has been pretty busy (with schoolwork, not work). The family and boss are out of town and I have agreed to stay here until they get back (sometime tomorrow) and keep an eye on their puppy, Cookie. Mmmmm, cookies.ย Sadly, there will be no pics with this post because I can’t figure out how to get the thingy plugged into the computer thingy..so I’ll just upload once I’m home!

This past Wednesday was exciting because I aced my Diabetes instruction! Woot woot! Then our class went down on the first hospital floor and sat in on a Diabetes Conference…and then I had to go to work. This week seems like it is just flying by…I guess technically I’m on “staycation” but just staying the night at work, hehe. Yesterday I was able to get a tonย  of homework done and even turn inย a research paper early (yay!). Then that night, Whitย met me for a run in the park. It was so nice to have a running partner for once! I’m so used to running alone or with my guy. After the run, I came in, ate an Amy’s burrito and called it a night at 9:15. What an old fart.

This morning has been pretty productive too! I strolled to Starbucks, sleepy-eyed and with bed head, to getย a Pumpkin Spice Latte (mmmmmmmmmmmmmm) and then came back to walk the dog.ย  Since my bills are already paid for the month, I figured now is the best time to stock up on new makeup. Macy’s is having a sale, so I headed that-a way and picked up some loot! (This trip was a little weird: 1. The sales lady started putting makeup on me without asking me first. 2. She left me all uneven colored afterwards! My personal space was invaded!!!) Nevermind the fact that I already knew what I was looking for, I guess it’s just her job to do that. Though, I’ve never had anyone at the makeup counter test the makeup on my face, they always do it on my arm or back of my hand. Oh well! I’m still happy with my purchase ๐Ÿ™‚ Not the $$$ pricetag that goes with it!

I then headed to Blockbuster to use a coupon I received in the mail. Jas is coming tonight to keep me company (no worries, the boss said it was fine! plus..I would never do anything disrespectful in their house..just felt the need to throw that out there) and we are going to Big Daddys woot woot…hello, sweet potato fries..what’s that you say?? You want to be in my tummy??? Nom nomnom. Lol <—DORK.ย  Who knows where we will go after that, it’s all up in the air! Its funny, I live with Jason and I sleep beside him every night, but I didn’t realize how muchย I take that for granted until I wasn’t with him last night ๐Ÿ˜ฆ What’s that saying? Absence makes the heart grow fonder?? Why, yes. Yes it does.

Food Snob

Hi there ๐Ÿ™‚

Gosh, did that weekend fly by or what?! Hope everyone had a good one! Jas and I had quite a busy weekend ๐Ÿ™‚

But before I get into that, I need to rant! Yesterday Jason and I set out to do our grocery shopping, most of the time we buy what we can at Wal-Mart and then finish off our grocery shopping at Harris Teeter. Well, upon going through the aisles at Wal-Mart, I noticed how their “Great Value” brand is taking over shelves. Things that I used to find there, I could not find this time, for example: Organic black beans, Kashi granola bars, organic bananas..ect. I was becoming one huffyย shopper.

It’s not that I have to buy organic all the time, but I like to at least buy it when I can. Just when I was thinking of throwing in the towel and going ahead and getting things I didn’t really want, I saw their garlic (in produce) was basically all rotten!!! ๐Ÿ˜ฆ Ok. No biggie. I just won’t buy garlic from here. I walk over to get some hummus and before I toss it into the buggy, I glance at the expiration date: 10/16/09!!!!!!!!! That was pretty much it with me. I was DONE with Wal-Mart and their sucky produce. I want to feel comfortable about the things I buy to eat and I don’t like having to settle.

I’m pretty sure Jason thought I was overreacting when I said I didn’t want to shop there anymore. And I’m really sure he thought I was overreacting when I drove to Bi-Lo on the way home to get some organic produce! ๐Ÿ˜€ But, they didn’t have any. ARG. So, to Harris Teeter it was. We found organic produce (yay!) but we both don’t want to go through this every single time we need groceries! What do you guys think? Do you do all of your shopping in one place? Are you considered to be a ‘food snob’? To me, I would rather feel good and confident about the things that are going into my body, than settle for what’s in front of me! So what if it takes three trips to different grocery stores!

Anyway ๐Ÿ˜€ Some fun things that did happen this weekend:

1. A bit of camera shopping in wal-mart (!!!!!!!!!!! Totally NOT excited about getting a new one ๐Ÿ˜‰ Yes, my face is that red without makeup! I’m a redhead-ish, so I have red undertones.

2. I tried Thai food for the first time! We have a new (vegetarian-friendly) restaurant here called “Thai House” and it is YUMMO! The prices are a bit high, but it was worth it! They can make any Thai dish vegetarian and I thought that was totally awesome. I ordered the Thai Sweet and Sour with tofu instead of chicken……*drool*. I couldn’t finish it so I took some home and have been munching on that tofu throughout the day ๐Ÿ™‚

3. Trixie had a playdate, hehe ๐Ÿ™‚ The black dog is named Maggie and she is our neighbors dog. They let her run loose in the mornings and every single weekend when I wake up to take Trixie outside she is on our porch waiting for her friend to come out and play ๐Ÿ˜€ It’s so cute! Trixie is such an old fart, so having a playful puppy around really brings out the playful side in her. Sometimes we let Maggie in our house, the cat has even gotten used to her!

4. There was a very beautiful sunset on my way home for the grocery store Sunday night! Don’t worry, I was totally the only one on the road when these were taken! I’m such a safe driver.

5. Jas and I made a delicious pot of potato and broccoli soup last night..this is one of my fav comfort meals! Shall I share? I think I shall ๐Ÿ˜‰

  • 1/4 cup all-purpose flour
  • 2 (14 oz) cans veg broth
  • 3 cups peeled red taters
  • 2 cups broccoli florets (I usually do more than that!)
  • 1/2 onion chopped
  • 1 1/4 cup skim milk
  • 1 cup shredded cheddar cheese

Whisk together flour and 1/3 cup of broth. Set aside.

Combine remaining broth, broccoli, onion and potatoes in a pot. Bring to boil, cover and simmer until potatoes are tender. Gradually stir in flour mixture. Cook for about 5 minutes.

Stir in milk and shredded cheese. Stir constantly until cheese melts. Enjoy!!!!

Now that I’m reflecting on the weekend, it’s been pretty great! I was able to catch up on some homework, which left me feeling ready to tackle Diabetes Week at school today! Hehe, and for you’r viewing pleasure: Stacey in her scrubs.

The Many Ways of POM

Hey there guys!

As usual, I’ve been itching to blog but haven’t had the time!ย Jason and I have had a very busy weekend (recap later) but before I got started on an all-day homework marathon, I thought I’d get on here and do what I said I’d do: Review of POM!

Last month the wonderful people over at POM sent me this in the mail:


I was a little shocked to get so many! (Before now) I’ve never tried POM. Of course, I had heard about it and wanted to try it, but the price is a little over my budget! Before diving in, I made sure to read about the product information!

  • POM contains no added sugars, preservatives, colors or filler juices (yay!)
  • POM grows their own fruit, picks it by hand AND manufacture their own bottles (how cool is that?!)
  • Clinical tests prove that POM juice can help lower LDL levels (bad cholesterol), improve blood flow to heart and improve prostate health in patients.

Sounds good to me!

What to do with so many bottles of POM?? Share, of course! My teacher and two other classmates received a bottle each and we sat around trying to figure out the different ways you could use POM. Here is what we came up with:

  1. Take it as a shot!
  2. Make a POM-tini! (you can find recipe here)
  3. Add it to your oats! As seen here
  4. Add it to hot tea for a good antioxidant additionย  ๐Ÿ™‚
  5. Make it into a salad dressing! <– courtesy of my teacher ๐Ÿ™‚ You can find the recipe under the Recipe tab at the top of my page.

I’m sure there are many other ways, so if you have any other ideas please feel free to comment and leave them! My first impression, after tasting, was that it’s a bit like cranberry juice! Kind of sweet and tart, but I think I like it better than cranberry juice! My fav way to use POM is in oats of course ๐Ÿ™‚

Oh No They Didn’t!

Hey lovies ๐Ÿ™‚

Thanks for all your suggestions! I am glad that I am not the only one finding it hard to make friends at this age! You all could move to NC and then problem solved, haha ๐Ÿ™‚ You guys really did give me some good ideas though! I am going to join a kickboxing (<—one of the top 5 things I want to learn to do!) class that meets on Saturday and I’m looking at joining a book club…SO….we shall see how it goes!ย  ๐Ÿ™‚

I haven’t meant to be away for the past couple days! I have a mid-semesterย  lab exam in Micro tonight that I’ve been preparing for (YUCK.)ย  Monday afternoon, before making a study guide, I was able to do my 4 mile Cramerton run without stopping!!!!! If you’ve been reading the blog for a while, you know that the Cramerton run has about 8 steep-assย  hills almost back to back. My legs were sooooooo sore yesterday and they feel even worse today. Funny how that happens!

But anywho, I woke up this morning and did some bicycle crunches, punches and arm raises to get my blood flowin’, but am so not gonna run until my legs feel better ๐Ÿ™‚ I also had some yummy oats:

  • 1/2 cup skim milk, 1/2 cup water
  • 3/4 cup oats
  • 1/2 naner smashed, other 1/2 sliced
  • 1 tsp dark choc pb
  • flax seeds
  • Stonyfield strawberry yogurt drizzled (lovvveeeee this stuff!)
  • Kashi Honey Sunshine sprinkled on top (meh, not the best combo but I needed to use up the last handful!)

You may also be shocked to know that for the past two days I’ve tried quitting coffee *everyone gasps in horror*. Monday morning, ugh…………it was the worst feeling ever! And I had been getting by without coffee all morning, but on my way to school I saw this out of my window!

Oh no they didn’t! Yes they did. They built a new Dunkin Donuts right next to my school!! Aghhhh! And with all those pretty decorations (you can’t see it in the pic, but there was a huge blowup cup of coffee on top of the building) they sure know how to lure a 24 year old coffee addict in. It worked and my plan was foiled. ๐Ÿ™‚ย  Oh well, at least I was alert enough in class! We had to do a presentation for a bunch of sleepy thirdgraders (eh hem, I counted six that were asleep) Those fools need to go get some Dunkin Donuts LOL jk ๐Ÿ™‚ On my break, I had one of these for the first time:

I thought it tasted a lot like a Cliff bar, but without the calories and sugar. These would make a good snack if you aren’t wanting a whole Cliff bar.

And now I have a confession to make: I like Lady Gaga. There I said it! I used to hate to listen to her music because it was soooo trashy sounding, but I can’t help but sing along during Pokerface and Just Dance ๐Ÿ˜ฆ So sue me. I don’t really think her lyrics are meant for anyone younger than 21 though, haha ๐Ÿ™‚

Chocolate Cures…Right??

Hey guys!

It’s Sunday night and I am feeling soooo lazy ๐Ÿ™‚ Jason is bowling with his grandpa, I was invited but I declined because nothing seemed more appealing than getting into my jammies!

My day was a tad busy but not very productive at all, haha. I started my morning with a cup of coffee in my new coffee mug! Isn’t soooo cute?! ๐Ÿ˜€ It was only $3 at TJ Maxx!

Since I’d be stuffing my face at a birthday party, I didn’t want to eat a huge breakfast. So I toasted up some strawberry Kashi waffles, plopped some dark chocolate pb and jam on top, added some sliced naner and Viola! There you have breakfast ๐Ÿ™‚

I hurried to get dressed and headed out the door for the birthday party. It was Edwin’s (a boy I nanny for) 7th birthday! Before eating, we sat around and made plates:

My boss always makes the kids’ cakes on their birthday, and they are always great!! She’s a choco-holic just like me ๐Ÿ™‚ And she was gracious enough to let me take home a peice to Jason, who was stuck at home doing homework ๐Ÿ˜ฆ

After the party shananigans ended, it was time for me to go home. I came home to pic up Trixie so I could take her on my errands with me. We went to walk in the park and I snacked on an apple in the car afterwards.

We headed to the grocery for a few essentials, then we went back home because it was baking time! I’ve been in a ‘baking mood’ all day…earlier I asked Jas “If I were to bake anything, what would you want me to bake?”. He immediately said: Pumpkin bread!

Pumpkin bread it was! Here is the recipe (adapted from Cooking Light magazine):

Chocolate Chip Pumpkin Bread

  • 2 cups canned pumpkin
  • 4 egg whites
  • 1/2 canola oil
  • 1 cup sugar
  • 1/2 cup low fat banilla yogurt
  • 1ย  cup semi-sweet choc chips
  • 3 cups whole wheat flour
  • 1 tsp baking soda
  • 1 1/4 tsp salt
  • 2 tsp cinnamon

Well, baking this made me hungry! My hand may have dug into the choc chip bag a few thousand times ๐Ÿ™‚ I didn’t want to spoil my appetite, so I went ahead and made dinner right afterward. On tonight’s menu: Penne Pasta with Roasted Veggies and Goat Cheese.

I turned the pasta on to boil. Meanwhile, I tossed zuccini, squash and onion in olive oil, garlic, salt and pepper and put them in the oven to roast for about 10 minutes. When the pasta was finished, I used tomato and basil pasta sauce and balsalmic vinagerette to season it. Added the veggies and goat cheese, give it a good stir and then dinner was done!

Though I’ve hardly done anything today, I feel so tired and lazy! I am watching Sex and the City and eating more chocolate.


Now, on a more personal note: I’m having a little bit of a dilemma. Remember this post? That was a post about my best friend and I “breaking up” (as you guys liked to put it!). We still haven’t talked, and I have yet to make new friends. Does anyone else find it extremely difficult to make new friends??? When you are younger, it’s easier I guess because your in situations where you can make new friends..but being older…I’m feeling a bit akward when it comes to making new friends!

And not to self-loathe or anything, but Jason is the only person I ever hang out with. (Haven’t you noticed?? Haha ๐Ÿ™‚ I love him to death and love being with him, but sometimes it’d be nice to have a friend to talk to…GAAHHH I feel like such a dork posting this! Do you guys have any advice for me? Ugh. Okay,ย I am now ending this post because it is utterly embarrasing!

UNO Your Heart Out

How has your weekend been so far?? Good, I hope! I was going to wait till tonight to blog, but reading others blogs really gets me in a ‘bloggy mood’ haha..So here I am. (Plus, I am going to be a busy woman today, so why not do it now?)

Yesterday was a really great day! I woke up at (what I thought) was 9 AM, but I must’ve still been a little asleep because really the clock said 10 AM!! Agh! Jason and I had to haul butt to get ready for our morning run! First, breakfast.

  • 1/2 c skim milk, 1/2 c water
  • 3/4 c of oats
  • tsp dark chocolate pb
  • 1/2 mashed banana, 1/2 banana sliced
  • Stonyfield Banilla yogurt drizzled on top

Nom nom nom ๐Ÿ™‚ It was good! And coffee made it even better of course!

Then it was time to head out the door. We were freezingย ourย patooties off!!! NC is ha ving a cold front, and I almost suggested that we go to the gym, but I threw on a fleece and sucked it up. It was about 53 degrees out…brrrrrrrr! Jason and I did a wonderful, almost effortless run, on the greenway. We were the only people out there! I felt so strong the whole entire time!! Here are our stats:

Woot woot! Jason and I both mentioned that we felt like we could go running on forever! (I think maybe it was the cold weather ๐Ÿ™‚

We had to hurry home after the run so I could eat, get a shower and we could go meet my momma! Lunch was this that I found at Trader Joes the other day:

These are pretty much battered onion, kale, cabbage and carrotย rolls. To make it a complete meal, I made a little asparagus andย a peice of toast with jam on the side.

For the life of me I could not figure out what those things reminded me of! I kept taking little bites, and saying “These taste like something I’ve had before!” Then, it hit me like a brick: they taste and smell exactly like onion rings! Haha ๐Ÿ™‚ They were a big hit with Jason, but I kinda wish they had more protein (less than 1 g.ย per roll). After eating, it was time for me to get ready and meet my momma!

Along the way, I picked up a Green Tea Snapple in the pear and kiwi flavor. It was pretty good, but I kinda wish that I would’ve just stuck with water. (Sorry for such a bright photo!)

We met my mom at TJ Maxx and shopped around a bit. I was soooo happy to see her ๐Ÿ™‚ Like I said, it’s been 3 months since we’ve seen each other!! That’s too long in my book. She was kind of down in the dumps because her cat, Peanut, was mauled by 2 wild dogs on Monday ๐Ÿ˜ฆ I hate that for her, I want to see myย  mommy like this –> :D, not like this –> ๐Ÿ˜ฆ

After TJ Maxx, we went into a few more stores, Khol’s, Petsmart (can’t spend too long in there or I’ll wind up with another animal to take home haha) and a cute little consignment shop that sold antique furniture (everything was a bit too pricey and big to put in our small place, but it was still fun to look at!) Then my mommy was ready to go home, so Jas and I dropped her back off at her car and said our good-byes.

We then went to look for food! It had been about 5 hours since we last ate andย I was getting a tad bit grumpy. Where to go?? Panera Bread!

Mmmmmm ๐Ÿ™‚ That soup was just what I was craving! It’s so cold and rainy out, it was the perfect dinnertime meal. Jas and I also split a double chocolate cookie for dessert ๐Ÿ™‚

Then it was off to my fav store! Books-A-Million!!!!ย  I love to go in there and look at all kinds of books, it helps me get ideas of what I want to read next, and of course, I always survey this aisle just to see what kind of crazy diets are out there these days!

Being a future nutritionist/personal trainer, it’s important for me to be ‘in-the-know‘ with these sorts of things! Ya know what I mean jellybean?? ๐Ÿ™‚

After pondering seeing a movie, we decided to go back home and have some beer and good conversation ๐Ÿ™‚

(Please excuse the red glowing eyes, that only happens to me when the moon is full, Bwhahaha jk ๐Ÿ™‚ Yuengling light was my beer of choice! Jas and I talked on the couch for a while, and somehow the convo moved on to the game of UNO. And I’m never one to turn down a game ๐Ÿ˜‰ We played for over an hour, with me winning most of the time, haha.

Munchies set in and my hand dug into the Kashi box quite a few times (add three more handfuls in your mind, please!). I can get very competetive, and poor Jason had to listen to some smack-talking lol. Poor guy puts up with all aspects of my personality, gotta love’em ๐Ÿ™‚ It was all in good fun! I had another 3/4 of a beer too. It was off to be with me at 12, he stayed up to watch “V for Vendetta”..

Now it’s morning and today’s agenda includes:

  • birthday party
  • back home, errand running
  • Trixie to the park
  • homework/blog
  • maybe some outdoor activity??
  • hiking?
  • whatever I please!!

The rest of my morning was spent doing homework, or at least trying to. It is very hard to find a place at work to spread out because the dog likes to constantly be in your face! So, I finally moved my studies into the guest bedroom, onto the bed where she can’t jump.

The day seemed to go by very quickly and before I knew it, I was free! It’s funny because Jason texted me and said “I’m free! When you free?” Hehe. We’re a bunch of texting geeks over here ๐Ÿ™‚

For dinner, I quickly heated up one of the Amy’s bowls that I found in the freezer.

Jason and Iย tookย Trixie toย the park so we could takeย her forย a walk. Poor girl’s been mostly inside this week due to the rain! But we did get a little break in it this evening, so we took the opportunity…and now it’s raining again. Good thing we went!

When we got back, I did a quick set of strength training while Jas played his Madden game. Here is what I did:

  • 60 pushups
  • 100 bicycle crunches
  • 50 right/left leg crunches
  • 3×15 overhead shoulder press
  • 3×15 bench dips
  • 3×15 punches (w/weights)
  • 3×10 bicep curls
  • It was a good quickie workout! And now I am ready to go snuggle with my man ๐Ÿ™‚ Oh and guess what! I get to see my mom tomorrow!!!! I haven’t seen her since late July and I’m so excited! I can’t believe it’s been that long…I’m definitely ready for some “Mommy and Me” time! Other things I am excited about: running 7 miles in the morning with my Jason, making a yummo breakfast to go along with that run and just having a great weekend period! You guys excited about anything this weekend? Please do share!

Driving In Drizzle

Good morning ๐Ÿ™‚

Not sure if the sun is shinin where you are, but here it is rain, rain rain. That made it extremely difficult to get outta bed at 4:30 and go to the gym!! When my alarm first went off, the excuses started rolling into my head: “You can work out after class.” “There is always tomorrow” “You need some rest, you don’t need to drive in this drizzle!” ENOUGH! Istarted reminding myself of how glad I would feel that I went, how nice it would be to already have a workout in by 6 AM! And how much I’m gonna looooveeeee my pancake breakfast when I got home ๐Ÿ™‚

So I went! Here is what I did:

  • 100 crunches
  • 15 jumping squats (to warm up)
  • 15 minutes of running
  • 15 minutes on elliptical
  • 15 minutes on the stairs
  • 100 bicycle crunches

Guess today was a kind of ’15’ day, haha ๐Ÿ™‚ I did plan on running 5 miles, but after I was on the treadmill for only 10 minutes, I realized I wasn’t enjoying it at all! I kept looking at the timer and my speed and wondering when I was going to be done. Running outside is so much better than being stuck on a treadmill!! By the time I left the gym, I was a sweaty, happy woman ๐Ÿ™‚

I drove (the 20 minutes!) back in the rain, and immediately started in on the scrumptious breakfast I had in mind!

Strawberry Drizzle Pancakes! (to go with the drizzle outside, of course ๐Ÿ˜‰

I used Aunt Jemima whole wheat pancake mix and added brown sugar and cinnamon to the mix. My toppings:

  • heated strawberries, mashed into mush <–hehe ๐Ÿ™‚
  • Stonyfield strawberry yogurt drizzled on top
  • Maple syrup
  • Dark Chocolate pb smeared on each pancake

Gahhhhh, foodie bliss ๐Ÿ™‚ They were so decadent! My initial thought was that they would be too sweet, but it tasted more like a breakfast after adding the peanut butter. I’m definitely making this again!

Now that I’ve had breakfast, it’s time for me to get ready for school! We are learning about metabolism and diabetes this week, fun fun! Oh, I also had a little coffee with my breakfast, but am not really liking the flavor of it…this may be a good day to have a diet soda ๐Ÿ™‚

Today’s agenda:

  • School 9-2
  • Work (for an hour) 3-4ish
  • Back to school for Micro lab 5:30-9

Food and Fall

So, how has everyone’s day been?? Mine was pretty unproductive ๐Ÿ™‚ After arriving at work (eh hem, nanny speaking here) and taking the little one off to preschool, the rest of my morning is pretty much spent like this:

And that’s my dreaded Micro book that I am staring so sadly at ๐Ÿ˜ฆ This is my struggle every morning: Ohhh to sit here and read blog’s all morning or to bury my nose in the book I hate most! Decisions, decisions. Just so you know, I get a little of both to make me happy ๐Ÿ˜‰

Blog reading got the best of me for about 45 minutes, then I took a quiz for Micro online. After finishing, I decided I needed to breathe in some fresh fall air…sooooo Cookie and I headed out for a walk in the park!

I heart weeping willows โค They are my favorite tree and it only made my day better to go on a long stroll on a beautiful fall day!

When we got back to the house I was in starvation mode! It was sort of weird because it felt like hunger just hit me out of nowhere! I gobbled down a Kashi bar…then an apple ten minutes later…then a spoonful of peanut butter five minutes later…then I decided to just go ahead and have lunch!

Lunch today consisted of a spinach salad, feta cheese, sunflower seeds, tomato, mandarin oranges, chickpeas with cranberry walnut dressing. YUMMO.

On the way to get the youngin’, I munched on two squares of Trader Joes dark chocolate. Can’t get enough of this stuff!

The rest of my day was pretty simple. I played with the kids and the dog, made sure everyone had their homework done, and did things a nanny does. My (unphotographed) snacks included another apple, more pb and a handful of Kashi crackers and raisins while walking around the house. When it was time for me to go home, I started feeling a bit odd. Not sick, but just either exhausted or well, just funny. My throat was sore and I felt a little out of it.

My drive home was radio-less and I was so glad to pull into home so I could get in my jammies. Microwavable foods are the best on nights like these! I love cooking. Haha ๐Ÿ™‚

Spicy black bean burger, laughing cow cheese wedge, wheatberry bread, pickles, ketchup and mustard with broccoli and two big ol’ slices of pineapple.ย Pretty simple meal to go along with my simple day!

Biggest Loser is on, the dishes are done and I am about to heat up some sippy time tea and have a pudding cup for dessert! It’s to bed for me right after my fav show goes off. Hopefully I won’t hit the SNOOZE button in the morning, I want to make it to the gym to do 5 miles before school. We’ll see if that happens!

PS. Any readers out there suffer from nightmares??? I have them at least twice a week and am starting to think I’m some sort of dimented weirdo lol ๐Ÿ™‚ Last night I had a terrible, terrible dream that left me startled awake with my heart pounding at 3 AM. I was too scared to go back to sleep!! Is this common???

P.S.S. Recipes page has been updated! I will be adding a few recipes to it at a steady pace…don’t have time to do it all in one sitting! Look for this: Vegetarian Naanini <—it’s a must try. Trust me!

For a vegetable naanini, you will need: 4 peices of naan (I used whole wheat), 4 cups cauliflower florets, 1 green bell pepper 1 red onion 2 tbs. EVOO, hummus, spicy mango chutney, 1 medium tomato.

*********Preheat oven to 350, toss cauliflower, onion and pepper in a tbs. olive oil and salt and pepper. Arrange in one layer on baking sheet, cover with aluminum foil, roast until tender (20 or so minutes…just guestimate!) Transfer veggies to platter and chop coarsely chop.

*********Brush both sides of naan with olive oil, on each peice spread hummus and chutney to your liking. Cut each naan in half, divide veggies into four portions and top naan peices with veggies. Add tomatoes and top each sandwich with remaining naan.

********Place 1 sandwich in medium-heated pan until one side is browned. Flip, repeat for other side. Remove from pan and enjoy! Please be careful when flipping in the pan! I accidentaly made most of my naaninis fall apart! Just beware ๐Ÿ™‚
